At the heart of this tradition, our olives are hand-harvested between November and January. Our family gathers in the groves, where olives are delicately picked to preserve their quality.

Once harvested, the olives are transported the same day to the village mill, where they are carefully washed, sorted, and cold-pressed to release their precious juice. No chemicals are added. OLI DEKA has an acidity level below 0.8%. This first cold press guarantees the perfect balance of flavor, aroma, and color in our extra virgin olive oil.
